Smoked Salmon Puff Bites

 

 

In Hawaii we had a personal chef come to cook us dinner. She made amazing tuna, shrimp, chicken, dessert, and pretty much anything else you can think of. This had me wanting to try and cook some foods I am not a fan of. Dun, dun. duuun.. SALMON

I try to like it. I really try to like it. I just can’t like it.. but once again, I tried

 

Smoked Salmon Puff Bites

  • 3/4 cup flour
  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 3/4 stick of butter
  • 1 tsp sugar
  • 1/2 tsp salt
  • cream cheese (desired amount)
  • smoked salmon (desired amount)
  • lettuce (2 leaves per puff)

 

  1. Preheat oven 350*
  2. pour water and milk in pot on medium heat
  3. add butter, sugar, and salt.. bring to a boil
  4. remove the pot from heat and add flour
  5. stir well, then place pot back on heat for 1 minute while stirring (ball of dough)
  6. remove dough and place in a bowl to cool for 10-15 mins
  7. add one egg at a time, stirring each egg in the dough mixture
  8. place dough in piping bag or zip lock bag with corner cut
  9. pipe the dough into small amounts on backing sheet and bake for 10 mins, it may take longer than 10 mins depending on oven. I cut one open after 12 mins and the inside was still “wet” so I cooked longer until inside was not “wet”
  10. cut salmon into strips
  11. cut open each puff, add cream cheese, salmon, and lettuce
  12. ENJOY

This were really good, the puffs were awesome, but I could not make myself like the Salmon. I am going to use the puffs for tilapia or chicken in the future. If you like smoked salmon, you will love these!

Glazed Skillet Shrimp

The recipe I used called this dish BBQ Shrimp. This is not what I thought of when I ate it. Actually when I made it I knew it wasn't even close to BBQ. I make my own bbq sauce so I know what goes into bbq sauces. This I will just call a glaze.


Glazed Skillet Shrimp*1 tablespoon of butter
*1 tablespoon of Worcestershire sauce
*    cup of fat free Italian dressing
*1 teaspoon of dried rosemary
*14 peeled tail-on thawed shrimp
*1 lemon wedge

Mix the first four ingredients in a bowl. Pour into a skillet and bring to a boil on medium heat.
Add shrimp to skillet and cook shrimp to preferred "doneness"
I flipped the shrimp once in the skillet
Cut lemon into wedges and serve

Great dish for an appetizer, part of a seafood or steak meal, or just as a small light lunch.

Scallops and Shrimp Pesto Pasta

This I did not take after pictures of. It was late, I forgot. I have never had scallops I like, but I love pesto, and pasta, and shrimp. So I figured alright.. lets give it a try. My husband got home extra late, and I tried to wait on him. The shrimp and pasta were well overdone BUT we ate it anyways. It would have been good fresh and on time though. I don't say this was great because it didn't really have a flavor to it. I would tweak it next time. There will be a next time though. I WILL MAKE IT GREAT

 
Ingredients:
  • 3 cups of frozen chopped broccoli *note
  • 1 Pound frozen bay scallops
  • 3.4 pound frozen raw peeled medium size shrimp
  • 2/3 cup low sodium chicken broth
  • 1/2 cup white wine
  • 3 springs parsely
  • 1 think slice onion
  • 1 think slice lemon
  • 1/2 pound multigrain angel hair pasta
  • 7 tbsp reduced fat basil pesto (buitoni)

 
Directions:
  1. if your shrimp is not peeled, you must first peel it. If it is frozen place under cold running water for 5 mins or less. It is easier to peel frozen shirmp when it is not all the way thawed out. PLUS you want it to be semi frozen while cooking. I take out the bottom vain or intestant or whatever that nasty brown line is underneath (mine already had the top vain out)
  2. Place 2 slices of lemon on bottom of crockpot
  3. pour in shrimp and scallops ( I used half the amount of scallops given I wasnt sure if I would eat them)
  4. add broth, wine, and parsely.
  5. Place sliced onions, springs of parsely, and lemons on top
  6. Cover and cook for 3 hours on high, 6 hours on low
  7. Squeeze extra lemon juice on top 30 mins before done
  8. Cook pasta normally then drain
  9. Add pesto to pasta and toss until evenly coated
  10. Cook broccoli and add it or put in on the side *note
  11. Take out lemons and onions
  12. Plate your pasta, pesto and add the scallops and shrimp

 
Notes:
  • I cooked my frozen broccoli witht he scallops and shrimp. It was NOT good. It did not taste but like soft seafood flavoring.. UGH.. I would cook it seperate and even put it as a side not within the dish

Tilapia Scampi

This recipe has turned me on to Tilapia. I do not like seafood. Well I love lobster. It is my fav. food ever. I love crab legs.. (snow crab to be exact) and I love shrimp. All but shrimp cocktail and coconut shrimp. So I guess I just don't like fish. UNTIL NOW.

Ingredients:
3/4 cut butter
2 tsp lemon juice *note
8 cloves garlic minced *note
4 (6 oz) tilapia fillets rinsed, thawed, and patted dry
1 tbsp dried parsley

Directions:
preheat oven to 375 degrees
combine the butter, lemon juice, pinch of parsley and garlic in micro. safe bowl
heat for 15 seconds, stir, 15 more seconds, stir, continue this until fully melted (about 1 min)
put tilapia in the bottom of the baking dish, pour mixture over the fillets
sprinkle parsley over them
bake in oven turning every 10 mins until the fish flakes easily with a fork. around 40 mins

Notes:
I have to have lemon with all my seafood. My husband always says, "so.. you need some shrimp with that lemon juice" I smother, drinch, drown, cover, soak, my seafood in lemon juice. The recipe calls for 2 tsp, I just add to my liking. and then after it is done I have lemon juice to "dip" it in..
Also, I love garlic so I add garlic powder along with the cloves
I actually make the mixture pour it on, while I wait 10 mins until flipping, I make another bowl of the mixture, when I flip the 2nd time (20 mins) I pour more mixture on it.
I make a small amount of the mixture again for after it is done and also to pour on the pasta I serve with it
I also like burntness on mine.. The garlic minced burns very nice so if you see the burntness.. YES, serve it!!

**This is my favorite unhealthy meal. Butter is fat free, and pasta is multi grain (other than the day I took photos of it ) but still, all that mixing and pouring serving with carbs just sounds unhealthy.. but oh so yummy!
