About Me

My photo
I am 27 years old, a wife, a mom, a sister, a newish home owner, a daughter, and a best friend. I am in the process of becoming a self proclaimed photographer, interior designer, and a chef. I want nothing more than to always remember the most positive and precious things in my life. I am very blessed to have such wonderful memories and my brain is to busy to remember them all. Blogging is my way to share and never forget.

 Breakfast Burrito
freezer/on the go

6-10 eggs, depending on how many you are making
breakfast sausage
onions/mushrooms/toppings
cheese

I used 6 eggs and made 10 burritos
I scramble the eggs in a cup then pour them in the skillet on med/high
I flip them like pancakes

I slice the "pancaked" eggs in strips
this is actually how my chica eats her eggs, she dips the slices

cook your breakfast sausage and cut up into pieces
add onion/peppers/mushrooms/ whatever else youd like

place all ingredients and wrap the tortillas up

 wrap in seran wrap individually
put in freezer

pull out in the morning and heat in the microwave. with the seran wrap will make them soft, without the wrap makes them not so soft. You can put them in the fridge the night before to take less time in the microwave

serve with salsa or hotsauce

Husband loves them! He eats a sonic burrito everymorning until now..

Ewww ... BaNaNaS

As most of you know, I do not like bananas. It took me about 1 year to even be able to cut them/touch them/peel them for my chica.EWW.. the smell, taste, and feel of them. I can not handle it. I have learned though, I can wash my hands afterwards. Plus, miss chica loves them.

So now, 3 years later, I have started to make different things with bananas. This one I thought for sure would be a winner. It wasnt. At least, not the day I made them. Chica is funny like that, she says she doesnt like a food but yet eats them right up. I think she liked them.. I didn't taste them

All you need is bananas, coconut oil, honey, lemon, and a crock pot..

Cut 3 bananas up in slices

put 1 tbls coconut oil in the crockpot

add 3 tbls honey to the bananas

squeeze 1/2 a lemons juice and let cook for about 1 hour 30 mins on low

sprinkle Cinnamon on them, and eat up

Hey good lookin...

Over the past week, I have found myself back in the kitchen. Nothing major or fancy though.

Buffalo Chicken Egg rolls

This wing master garlic parmesan is the BEST wing sauce ever! We got it on our trip to Gatlinburg

Buffalo Chicken Egg Rolls

*cooked shredded chicken, amount depends on how much you are making
I used 2 1/2 of the breast pictured up top.
*hot sauce or buffalo sauce to taste/liking
*fresh blue cheese
*pack of egg rolls pastry
*slaw, broccoli slaw, or celery chopped up
I made half with slaw and half just chicken/blue cheese

Cook chicken if not already cooked and shred it
put in a bowl and mix with hot sauce to taste
place egg rolls out on clean smooth surface
place about 1 tbls slaw on corner
place about 2 tbls of chicken mixture on slaw
place blue cheese on chicken mixture
flip the end over the mixture pointing to the middle of the egg roll
flip one side over and then the other side
flip upwards one time
wet the top corner with finger and water
flip corner down to seal
(make an envelope)
bake on 375 for 18 mins or until crunchy

** note, these did not taste as good as they look. I ended up taking apart the egg rolls and just eating the chicken. I would not give up on them, I just think I need to tweek it a little. Maybe use a different type of egg roll .. not sure but I would give it a 4 or 5 star..

English Muffin Cheese Pizza

I have fallen in LOVE with Thomas English Muffins 100% Whole Wheat! I could put anything and everything on them! I like them better than bread, sand which rounds, or bagels!

For lunch today I was looking for something quick and easy while I put together tonight's dinner. (Turkey Chili.. recipe will come tomorrow) So I came up with common sense kinda English Muffin Cheese Pizza

Normally on my homade pizzas (I learned my lesson about ordering pizza) I add spinach, mushrooms, turkey, and whatever else makes it seem more healthy. This is so I don't feel quality as I dip that toasted crust into the ranch dressing. MmmmMmmm. Today I just wanted cheese though.. (no ranch with an english muffin)

English Muffin Cheese Pizza
*cal. 200  *fat 6   *sodium 410  *carb 26  *protein 12

1/4 cup 2% shredded mozzarella cheese

1/4 tsp oregano

*cal. 10  *Sod. 10  *carbs 2.5
1 100% whole wheat Thomas english muffin
*cal 120  *fat 1  *sod. 220  *carb. 23  *protein 5

Toast both halves in toaster
Add toppings
Broil in oven for 1 to 3 mins (till desired melt)
I like mine a little burnt!

M.I.A No Longer!!

I have been M.I.A in the kitchen and in the cooking blog. Well not so much in the kitchen as in the blogging but the great news is I am back! I have been focusing on eating right and not so much cooking. Now it is time to combine the two things along with blogging and get back to what I first wanted to do with this blog!

I am counting calories. I KNOW. Everyone hates to hear those words but it helps. Read Here to find out my thoughts on counting or at least understanding calories and sodium.

So, here is the menu for the week.

SNACKS
Creamy Garlic Herb Dip
Orange Chipotle Spiced Pecan Mix
(Texas made the Pecan Tree the state tree in 1919)

BREAKFAST
Mediterranean Style Frittata  Bite Size Frittata
(Frittatas originally came from Italy and the original frittata means fried. Usually fried leftovers from the night before. In america it has taken on as a breakfast since the staple American breakfast food is used.. Eggs)

LUNCH/SOUPS
Oriental Soup with Mushrooms, Bok Choy, and Shrimp
(Bok Choy is China Cabbage. In 2009 a women died from consuming 1.5 kg a day. Bok Choy has toxins in it that if you eat large quantities, can cause upset stomachs and dizziness)  FREAKY!
Chicken Asparagus Salad Creamy Chicken & Asparagus Salad
Chicken Salad with Avocado Dressing
(Avocado has the highest protein than any other fruit. It also has very healthy fats but should not be eaten in large quantities at a time. If you have an avocado that is not ripe, place it in a paper bag to speed up the process or you can place it in the fridge to slow down the ripening process.)

DINNER
Skillet Shrimp with BBQ Glaze Glazed Skillet Shrimp
Balsamic Chicken and Mushrooms
Dark Bean Soup with Avocado Lime Salsa
Southwestern Chicken and White Bean Soup
Yucatecan Rice Salad
(Yucatecan is a mixture of Mexican and European. This is because the Yucatecan Peninsula, apart of Mexico, was considered to be to far to reach from all other parts of Mexico. The Peninsula was known for having ports and the European were able to reach the ports easily. This is when the Peninsula became influenced with the European was such as dress, architecture, and .. you guessed it, cooking)

Looks like I have some major cooking to do! Can't wait to cook, take pics, and share my recipe (tweeks as always from the recipe I get it from) Be looking for it as early as tomorrow!

Again, I will link each dish to the recipe and photos as I make/upload them!
