DIET? WHAT!!

If you read my last blog post on my main blog  then you already know I am doing a crash diet. It starts today.. well the food part starts tomorrow. I have to go to the store tonight. But everything is ready other than the store.. I will still be cooking the listed meal plan for my husband and daughter, I will just have my own meal plan along with it. I am keeping a food journal to track what I eat, how much "stuff" is in it, and so on. Wish me luck!! I have 14 weeks to do what I want. I don't really have a true goal of weight loss or pant size, I just want to see results. To know I am doing good. Soo here I go!


MY MEAL PLAN FOR DAY 1

Meal One
  • celery stalk before breakfast
  • hard boiled egg
  • half grape fruit
  • plain whole wheat toast
  • half glass of skim milk
  • entire glass of water
Meal Two
  • entire small apple
  • handful (1/2 cup) of unsalted nuts (brizillian nuts if possible)
  • entire glass of water
Meal Three
  • 1 carrot before salad
  • romain lettus mixed with
  • 5 grapes cut in half
  • 1/4 cup of reduced fat italian dressing
  • entire glass of water
Meal Four
  • 2 tbls (32 gm) penut butter
  • celery stalk
  • entire glass of water
Meal Five
  • 1 carrot before dinner
  • Salmon
  • Lemon Juice
  • Garlic
  • Asparagus
  • 1/2 glass skim milk
  • entire glass of water

Meal One

  • 1 tbsp olive oil mayo

Meal Four
  • carrot
  • 1 oz low fat cheddar cheese
  • entire glass of water
Meal Five
  • 1 carrot before dinner
  • spinach leaves
  • Lemon Juice
  • salmon on the salad
  • 1 small roasted potato
  • 1/2 glass skim milk
  • entire glass of water
MY MEAL PLAN FOR DAY 3

Meal One

  • low fat cheddar cheese 1 oz
  • plain whole wheat toast

Meal Two
  • entire small apple

  • half grapefruite
  • spinach lettus
  • 5 grapes in half
  • reduced fat italian dressing 2 tbls
  • entire glass of water
Meal Four
  • carrot
  • 2 tbls penut butter
  • entire glass of water
Meal Five
  • 1 carrot before dinner
  • Lemon Juice
  • salmon on the salad
  • 1 small roasted potato
  • 1/2 glass skim milk
  • entire glass of water

Then I will rotate back to day 1. This is so that I do not have to plan or buy more food. My biggest problem other than not being thirsty is that I do not eat this much ever! It sounds like a ton of food. I know the servings are not big but 5 times a day in my busy day.. my plan to accomplish:

get everything ready 3 days ahead of time. Have 3 different lunch boxes in my fridge waiting. Have the plan of what to eat when in each lunch box. Set an alarm on my phone ever 3 hours.

Any thoughts, advice, ideas, or info?

Pork Tenderloin Flauntas

These were a hit! FOR SURE! .. my little chica didnt eat them since she seems to be a self proclaimed vegiterian except for chick fa la's chicken nuggets (the only chicken she eats .. the only meat she really eats)
I did take the meat out for her and then she cleared her plate.. Anyways back to the recipe.. I didn't take a picture after they were baked.. I always seem to forget about the after pic because I want to eat!

Flauntas are normally deep friend. We all know, I am staying away from deep fried.. well fried anything! So, I baked mine. They were so freakin good!!

Indredients:
  • 1 tbsp live oil
  • 1 sweet yellow onion cut up in desired sizes (I chopped mine)
  • pork tenderloin bonesless strips
  • chili powder to taste
  • paprika to taste
  • coriander to taste
  • garlic powder to taste
  • cumin powder to taste
  • oregano to taste
  • sea salt to taste
  • flour tortillas as many as your cooking
  • cheese to taste

Directions:
  1. Preheat oven to 375
  2. In bowl mix the chili poder, paprika, corinader, garlic, cumin, oregano, sea salt all to taste.. I have done this so many times for my mexican dishes I know it by the look, smell, and taste.
  3. oil in skillet on med/high
  4. place strips in skillet and pinch/sprinkle the season mix on top of each one, flip and season, flip again
  5. only cook 3/4 mins. You do NOT want the meat cooked all the way. it will finish cooking in oven
  6. Take out meat, cut into desired sizes (I cut mine into pieces)
  7. wet paper towel and wrap tortillas in it. Microwave for 1 min
  8. add cheese, onion, and then meat
  9. roll up tortilla and place seam side down on pan
  10. bake 8/10 mins, then flip and bake 3/4 mins until deisred color and crunch
  11. serve with guac. sour cream. hotsauce. salsa. or any other desired add ons
Note:
  • You can add peppers, mushrooms, and so on to the tortilla before you roll and cook it. Get creative!
  • If you use fat free sourcream, fat free/low fat cheese, wheat or multi grain tortillas, and the right cut of meat. This is a very healthy protein meal! THIS IS A GREAT PORK WEBSITE

Not giving you the recipe.. NASTY!

The asparagus goatcheese pasta was ewwww!  I mean N.A.S.T.Y!  It had way to much cheese so I rinsed half of it off and stirred back in. Still... uneatable... so I rinsed it all off and started over. Creamcheese maybe.. nope.. nasty. I rerinsed it for a 3rd time. Garlic, butter, and salt. I don't like to use butter or salt when I cook (mainly because I love butter and salt and I would just load it up so now I have just stopped all in all with it. very unhealthy!) But tonight I did it. butter, salt, and garlic. Still just not eatable. I think at this point the first dish was so nasty I couldnt taste anything good. I tossed it. Yes all of it. I am now waiting on my husband to make me a wonderful penutbutter and jelly.

DON'T MAKE IT!!  I wont even give you the recipe!

March 21st-25th

Goat Cheese Aspargus Pasta
* Goat cheese is made of 100% goat milk unlike other cheeses. Example: Feta cheese has only 30% goat milk and 70% sheep milk. I did not know that sheep had milk. At least I never thought about it. Actually cheese are made of buffalo, cow, sheep, and goat milk.

Pork Tenderloin Flautas
*Flautas is the mexican word for taquito. In mexico a taquito is a taco that is half the size. It is a tortilla folded in half filled with meat. A Flautas is a tortilla rolled up. It is usually fried although mine will be baked.

Mushroom Beef Stew (Crockpot)
*Wild mushrooms are the best type to cook with. They add more flavor than other mushrooms. If you choose to go out and pick your own mushrooms (I am not that brave of a chef) Be careful. Mushrooms can be poisonius. There are many ways mushrooms can be cooked.

Italian Sausage Soup (Crockpot)
*We all know that we do not like to hear what sausage is made of but first check this article out about sausage. It is actually things I did not know.  It will make you want to read the package before you buy it! So now we are left wondering what sausage to choose when we just want that horribly sounding good tasting sausage. Well, turkey of course is going to be better. Here's some better answers to what should I choose?

Ribs in the crockpot

This were so freaken good. The meat just melted in your mouth. Great with backed potato or slaw. Don't forget the baked beans!

 
Ingredients:
  • 1 1/2 lbs ribs with bone or without bone, your choice I used with bone
  • 1/3 cup mayple syrup
  • 1/3 cups soy sauce
  • minced onion to taste
  • 1 tsp cinnamon
  • 1 tsp fresh ginger
  • 1 tsp all spice
  • garlic powder to taste
  • 1 tbsp brown sugar
  • 1 tbsp worcestershire
  • 1/4 cup water

 
Directions:
  1. combine all but meat in a bowl and mix
  2. place ribs in crockpot
  3. pour mix on top
  4. low 6 to 8 hours until done high 3 to 4 hours
  5. The longer they cook, the softer the meat, cook to your liking

Rum Glazed Grilled Shrimp

Looking for a sweet shrimp dish? This is it! The flavor I did not expect but I ate it all. So did the husband and my little chica. Again, I forgot to take pictures because the husband got home late. This time, the shrimp was not overdone!

Indredients:
  • 1/4 cup of honey
  • 1/2 tsp lime juice fresh
  • 3 tbsp spiced rum (captain!)
  • 1/2 tsp grated orange zest
  • 1 tbsp fresh orange juice
  • 1 tsp fresh ginger
  • 1 tbsp shopped fresh cilantro leaves
  • 1/4 tsp salt
  • 1/4 pepper
  • 1 1/2 tsp cornstarch
  • 20 jumbo peeled deveined shrimp
  • 4 skewers

Directions:
  1. Preheat an outdoor grill for medium heat
  2. Mix together all ingredients. Mix until cornstarch is blended with the rest
  3. Pour half the mixture on the shrimp making sure they are fully covered
  4. Place shrimps on skewers
  5. Grill shrimp until bright pink and opague and the glaze has cooked into the shrimp about 4 mins per side.
  6. Baste with additional unused glaze before turning the shrimp over
Other cooking option
  • put stove on medium heat
  • place the shrimp in the pan after it is hot instead of putting on skewers. Cook 3 mins, flip, add more glaze, cooking 3 more mins and flip. cook until done
Note:
  • The orange zest is strong so don't overdue it. In fact, under do it. I would ad extra rum and extra lime juice. It was a bit honey zested for me.

Scallops and Shrimp Pesto Pasta

This I did not take after pictures of. It was late, I forgot. I have never had scallops I like, but I love pesto, and pasta, and shrimp. So I figured alright.. lets give it a try. My husband got home extra late, and I tried to wait on him. The shrimp and pasta were well overdone BUT we ate it anyways. It would have been good fresh and on time though. I don't say this was great because it didn't really have a flavor to it. I would tweak it next time. There will be a next time though. I WILL MAKE IT GREAT

 
Ingredients:
  • 3 cups of frozen chopped broccoli *note
  • 1 Pound frozen bay scallops
  • 3.4 pound frozen raw peeled medium size shrimp
  • 2/3 cup low sodium chicken broth
  • 1/2 cup white wine
  • 3 springs parsely
  • 1 think slice onion
  • 1 think slice lemon
  • 1/2 pound multigrain angel hair pasta
  • 7 tbsp reduced fat basil pesto (buitoni)

 
Directions:
  1. if your shrimp is not peeled, you must first peel it. If it is frozen place under cold running water for 5 mins or less. It is easier to peel frozen shirmp when it is not all the way thawed out. PLUS you want it to be semi frozen while cooking. I take out the bottom vain or intestant or whatever that nasty brown line is underneath (mine already had the top vain out)
  2. Place 2 slices of lemon on bottom of crockpot
  3. pour in shrimp and scallops ( I used half the amount of scallops given I wasnt sure if I would eat them)
  4. add broth, wine, and parsely.
  5. Place sliced onions, springs of parsely, and lemons on top
  6. Cover and cook for 3 hours on high, 6 hours on low
  7. Squeeze extra lemon juice on top 30 mins before done
  8. Cook pasta normally then drain
  9. Add pesto to pasta and toss until evenly coated
  10. Cook broccoli and add it or put in on the side *note
  11. Take out lemons and onions
  12. Plate your pasta, pesto and add the scallops and shrimp

 
Notes:
  • I cooked my frozen broccoli witht he scallops and shrimp. It was NOT good. It did not taste but like soft seafood flavoring.. UGH.. I would cook it seperate and even put it as a side not within the dish
